
Cooking Beats: Raíces heads into its 3rd instalment with guest chef Mario Malvaez (former Head Chef for Super Loco Robertson Quay & Lucha Loco).
Mario started working in the F&B industry in Mexico City in 1998 as a junior chef. In 2000, he started a five year course of Culinary Arts and Gastronomy at the ‘Universidad del Claustro de Sor Juana’, Mexico City. During the last year of his studies, he was involved in a partnership to open a Middle Eastern cafe in downtown Mexico, and in the years that followed continued his career developing a family business of catering services.
In 2005, after obtaining his bachelor’s degree, Mario joined a cruise company for nine months to travel around the world. The trip expanded his knowledge of international food, and the contact with a multitude of cultures gave him the ability to understand basic practices for developing new concepts in food, service and drinks. Eventually he found an opportunity to set foot in Singapore – and has been living here for the last eight years.
Mario will soon be bringing his culinary expertise into Kilo Kallang’s kitchen, with a mouth-watering 8-course Mexican feast to give diners a taste of the city he grew up in.
Cooking Beats: Raíces sees guest chefs from a variety of colourful backgrounds helming Kilo Kallang’s kitchen to serve culinary-comforts they grew up on back home, accompanied by a special selection of beats to offer diners a fully immersive glimpse into the chef’s culture.
